When jibing in switch stance, simply turn the wing not only in the new direction of travel, but also directly through another 360 degrees.

This works quite easily if you turn the wing flat above your head as if it were a plate. Due to the downwind course, the wind and the airflow almost cancel each other out, and with a little momentum, the wing can be turned almost single-handedly, as Alan Fedit demonstrates in this video.
